GUT-LOVING & IMMUNE SUPPORTIVE SWEET POTATO, BROCCOLI AND HAM SOUP

Loving your gut is easy. There are more than 101 ways, whens and whys to Love Your Gut. One of the easiest ways to use Love Your Gut (LYG) is to think about how to add it to your favourite dishes. With no discernible taste and a superfine texture, LYG powder is a great addition to many, many meals and drinks. 

Supercharge an already gut-friendly dish like smoothies, porridge, cooked salads or soups with a tablespoon of Love. You can add LYG at any stage of cooking or preparing. Think of adding about 1-2g of LYG powder per serve of whatever you're cooking.

Try this delicious gut-loving sweet potato, broccoli and ham soup. The sweet potato is high in vitamin C, which is great for supporting your immune system. Plus, adding a few spoonfuls of LYG will help keep your gut clean so it can do its work alongside your immune cells to keep you strong and healthy.

Sweet potato, broccoli and ham soup

SERVES 4

This soup is so delicious and easy to throw together. It’s also great to freeze, for use as a quick midweek work meal. 

Ingredients
  • 1 tablespoon olive oil
  • 2 leeks, pale part only, thinly sliced
  • 2 garlic cloves, finely chopped 4 thin nitrate-free ham slices, chopped
  • 500 g (1 lb 2 oz) sweet potato, peeled and chopped
  • 1 turnip, chopped
  • 1 head broccoli, chopped 1 litre (35 fl oz/4 cups)vegetable stock or filtered water
  • 2 teaspoons picked thyme leaves, plus extra sprigs to serve
  • sea salt and freshly ground black pepper, to taste
  • 1-2 tablespoons Love Your Gut powder
  • 80 ml (21/2 fl oz/1/3 cup) coconut cream

Method

  1. Heat the olive oil in a large saucepan over medium heat, then cook the leeks, garlic and ham for 5 minutes, stirring frequently. Add the remaining ingredients except for the coconut cream, then bring to the boil. Reduce the heat to low and simmer, covered, for 20 minutes, or until the vegetables are cooked.
  2. Transfer half the soup to a blender, allow to cool slightly, then pureģe until smooth. Return the pureģed soup to the pan to heat through.
  3. Ladle into bowls, swirl in the coconut cream and serve garnished with thyme sprigs and a grind of pepper.

SUPERCHARGED TIP

  • Roasted sweet potato slices make a lovely garnish for this soup, as do edible flowers.

I’m looking forward to making this soup. I’ve bought the ingredients, but just re-read the name of the soup – Sweet potato, broccoli, and HAM soup.
I’ve just noticed you put the ham ingredient next to the leeks, so I didn’t notice it. You may wish to put it on a separate line.
Anyway, I will pop out and buy some ham today and look forward to enjoying this soup soon. Thanks for the recipe 😀
