15-Minute Japanese Weeknight Dinner: Carol's Soba Noodle Salad with Teriyaki Salmon

Carol makes this at least once a week and has converted everyone around her. It's naturally gut-healing (buckwheat soba, fermented soy, omega-3 salmon), naturally blood-sugar balancing (protein, good fats, low-glycemic noodles), and naturally delicious. This is the kind of weeknight dinner that doesn't feel like you're "being healthy"—it just is. Copy Carol's exact method below.

Ingredients

  • 150g buckwheat soba noodles
  • 2 salmon fillets (around 120g each)
  • 2 tbsp tamari (or soy sauce)
  • 1 tbsp mirin (or apple cider vinegar)
  • 1 tsp sesame oil
  • 1 tsp chilli oil or chilli flakes (optional)
  • ½ cup pickled ginger (or shredded fresh ginger)
  • ½ cup edamame beans (fresh or frozen)
  • 1 tbsp sesame seeds
  • Fresh coriander or spring onion to finish

Pantry Swaps (Gluten-Free)

  • Buckwheat soba: Naturally gluten-free. Check the label—some brands mix in wheat.
  • Tamari instead of soy: Gluten-free, slightly deeper flavour.
  • Apple cider vinegar instead of mirin: Not exactly the same, but achieves the balance. Use a touch of honey if you have it.
  • Sesame oil: Use what you have. Coconut oil works if desperate.

The Method (15 minutes from start to table)

  1. Cook the noodles (5 mins): Boil water, cook soba noodles per packet instructions (usually 4–5 mins). Drain, then rinse in cold water so they don't stick. Set aside.
  2. Prepare the sauce (1 min): Whisk together tamari, mirin, sesame oil, and a little chilli oil if you want heat. Taste. Adjust.
  3. Marinate the salmon (1 min prep): Place salmon fillets on a plate. Brush with the sauce. While you do the next step, the salmon is absorbing flavour.
  4. Pan the salmon (7 mins): Heat a non-stick pan over medium-high heat. Skin-side down first (4 mins). Flip. Cook another 2–3 mins until just cooked through. The internal temp should be 45–50°C (warm but still slightly translucent in the centre—it continues cooking as it cools). Transfer to a plate.
  5. Toss the noodles (1 min): Combine cold noodles, most of the sauce (reserve a little for drizzling), pickled ginger, edamame, and sesame seeds in a large bowl. Toss gently.
  6. Plate & finish: Divide noodles between bowls. Break salmon into chunks, scatter over the top. Drizzle with reserved sauce. Finish with fresh coriander or spring onion.
Pro tip from Carol: Cold or room temperature is the goal. Make the noodles in the morning, store in the fridge, add salmon at dinner. Or make everything the night before and reheat the salmon gently before eating. This is a build-ahead dinner that only gets better.
