Gutmeal (Oatmeal with a Gut-Healing Twist)

Ingredients: 

  • 1 TBSP LYG diatomaceous earth powder
  • ½ cup of water
  • ¼ cup of gluten free oats
  • Pinch of  Celtic or Himalayan sea salt
  • Pinch of cinnamon
  • ¼ cup of coconut milk
  • 1/3 cup of mixed berries
  • 1 small banana, halved lengthways
  • 1/4 cup of walnuts
  • 1 TBSP of rice malt syrup

    Method:

    1. Preheat oven grill and line a tray with baking paper.
    2. Place banana skin side down and scatter walnuts on the tray.
    3. Drizzle rice malt syrup and place under the grill for 10 minutes or until golden.
    4. Meanwhile, cook oats in water in a small saucepan over low heat.
    5. Add sea salt and cinnamon.
    6. When cooked, stir in the LYG diatomaceous earth powder.
    7. Add milk and remove any lumps by stirring through.
    8. Top with berries, banana and walnut.
    9. Enjoy while warm!
